spec for extend-protocol [core.specs]

Per https://ask.clojure.org/index.php/13723/spec-for-extend-protocol

Add spec for extend-protocol esp wondering about questions of whether to support (Class/forName ..) for the class names. This has been a historical issue to specify array classes in particular (new options may exist in Clojure 1.12) - see https://clojure.atlassian.net/browse/CLJ-1381 .

FWIW: CLJS only supports a symbol, not some expression
